Tips

Kitchen notes

In chai and coffee

Add Purova while the drink is hot and stir well. Classic is made for your everyday cups; Amber works too.

In cold drinks

Stir into nimbu pani, lassi or cold coffee. Mixing it with a splash of warm water first helps it dissolve faster.

In mithai and desserts

Use Amber when you want browning or caramel notes. Taste and adjust before you finish the dish.

In baking

Amber browns like sugar, so keep an eye on the oven and lower the temperature slightly if the top colours too quickly.

How much to use

Both are made to taste and use like sugar. Swap it in, then adjust to taste.

Storage

Store in a cool, dry and hygienic place, away from direct sunlight. Always use a dry spoon. Best before 24 months from manufacture.
